Ocean Wise Celebrity chef Ned Bell is being flown in from Vancouver by Pacific Coastal Airlines to create a gourmet three-course seafood lunch to raise awareness and funds for t he purchase and restoration of Kus-kus-sum (the Old Field Sawmill site). Locals Restaurant will host the luncheon on May 26th at 11:30am.  Bell is a long-time sustainable seafood ambassador based at the Vancouver Aquarium. In early 2014 he founded Chefs for Oceans and rode his bike 8,700km across Canada to raise awareness about sustainable seafood.
The lunch will include:

  • welcoming reception with a cocktail and amuse bouche
  • meet and greet with Ned Bell and Ronald St. Pierre
  • gourmet three-course meal
  • a cooking demo by Ned Bell
  • Project Watershed tote bag
  • a signed copy of Ned Bell’s cookbook Lure: Sustainable Seafood Recipes from the West Coast (retail value $40)
  • support of a historic restoration project

Ned Bell’s cooking philosophy is globally inspired and locally created. In his new cookbook ‘Lure’ he explores his love and knowledge for sustainable seafood. He aims to engage his peers and chefs in communities, regions and provinces Coast to Coast to Coast through education and awareness for the future of sustainable seafood, to create a movement which, within in the next 10 years, allows every Canadian to easily and readily access sustainable seafood for themselves and their families. The hope is that as the sustainable seafood movement continues to grow, environmentally responsible procedures will become firmly rooted as standard methods in future generations.

Locals is perfectly located for this event as it is directly across the river from the Kus-kus-sum site. Tim Ennis, Project Watershed’s Senior Kus-kus-sum Project Manager, will say a few words about the transition from eco-liability to eco-asset, and encourage diners to imagine the 440 meters of steel wall and 8.3 acres of pavement they see before them as lush habitat that supports salmon and other wildlife. The event helps to remind us that we are not only creating a legacy in the heart of our community, but also creating critical salmon habitat that will help sustain our west coast food resources.
Project Watershed thanks the North Vancouver Island Chefs Association for organizing this event and Pacific Coastal Airlines for sponsoring Ned Bell’s flight. We all have a part to play in
